An Unusual Win

There are many vegetables that we already know about Broccoli cauliflower carrots and many others Perhaps we are bored with some of them and run the other way as soon as they are mentioned Kohlrabi is one of the unusual ones that many forget about When I speak to clients about Kohlrabi many have note even heard about or know what to do with it As Austrian we grew up on Kohlrabi and I almost want to declare it as a national vegetable Of course as child I hated it Funny how things turn around What I used to hate became a love to eat What is so special about this vegetable It is good for indigestion jaundice diabetes and the lymph system In China the seeds have been used to improve eyesight This vegetable is high in vitamin C calcium and potassium and it is a good source of fiber Kohlrabi belongs to the cabbage family Yet it doesnt taste anything like it What are you going to do with it Just peel the kohlrabi slice it add a little bit of salt and place it on a plate Then cover it with another plate and leave it in the refrigerator to let it sweat for about 15 20 minutes It is a great appetizer to serve in the summer Some kohlrabi taste spicy and have a kick to it and others are more mild Try them out raw first to taste the vegetable instead of adding it into stir-frys or soups And what are you not going to do with it Force-feed them your friends who dont like it Unless you are Austrian and you want them to be exposed to a different vegetable that is very seldom served in the US Just trick them into tasting it without knowing what it is Many times I just prepare it serve it as an appetizer and dont tell guest what it is They really enjoy it because of its unusual taste and texture When everyone gives it a try I tell him or her what it is and they love it Give it a try Stefan
